This dish is SO simple, a child could do it !
40 mins (ish) and your done. Small list of ingredients means it’s easy on the wallet too. Further to that, there’s feck all calories and whatever fat is there is of the good kind. So it’s a low cholesterol dish like my Chicken Curry – #tickerfriendly (I’ve just decided that’s my new hashtag for healthy food!)
Nip to the supermarket and pick the following up:
- 1 tbsp rapeseed oil
- 2 inches ginger (spiced or grated)
- 10 -15 dried apricots
- 1 onion (sliced as thin or think as you like)
- 3 chicken breasts (diced)
- 1-2 tbsp harissa paste (if you like spicy, add more)
- 400ml hot chicken stock
- 220g can chickpeas (rinsed & drained)
- 200g couscous
- handful coriander (fresh or tinned)
Once it’s all together, cover/simmer/mix it together on the lowest heat for about 5 mins. Then mix up with a fork and taste. Add extra harissa paste at this stage (if ya want) and re-mix, then serve with some homemade garlic bread.
‘Honest Jim’ time – tonight, it was a tasty munch but it wasn’t the best I’m made. The Missus has made this for me a few times and we followed the same recipe, yet it was slightly different and her’s was better. Think I used a different harissa paste, not really sure.
Just for the record, next time I’m gonna add some extra’s like – more harrissa sauce (cause it’s serious shit) / broccoli / peppers / mixed seeds & unsalted nuts (loving these in food since the stents).
