Spicy Bean Casserole

Absolutely bursting with flavours, it’s a super healthy dish and despite the name, is not that spicy at all. Of course you can always add more chilli powder to change that.

I’m pretty impressed with this dish as I’ve come up with it myself by mixing and matching a few dishes that I like and for me, this tops the lot. Every ingredient used is super-duper healthy.

It’s also a very easy dish to make, leaves very little cleaning up which does help. Prep time is about 10 – 15 mins with cooking time about 30 – 40 mins between the hob & oven.

This dish will easily serve 4 with possible leftovers for the next next day (lovely in a wrap if not messy!).

So this is what you’ll need to make this cracking vegetarian dish:

Spicy Bean Casserole

  • 2 tbsp rapeseed oil
  • Quorn chicken pieces, a good few depending on what you like
  • 2 cloves of garlic
  • 1 large/2 small onions, chopped to your liking (chunky for me)
  • 2 celery sticks, chopped
  • Broccoli, few florals of
  • 1 red pepper, chopped
  • 1 tin of chopped tomatoes
  • 1 tin of chick peas
  • 1 tin of cannellini beans
  • 1 tin of red kidney beans
  • 350ml vegetable or chicken stock – use 2 x Knorr Stock Pot (the rest are just muck)
  • 1 tsp Cumin Seeds
  • 1/2 tsp Cinnamon
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Turmeric
  • 1/4 tsp Chilli Powder
  • 2 tsp Chia Seeds
  • 2 tsp Mixed Seeds
  • 2 tsp Lentils
  • Salt & Black Pepper

And follow these fairly straight forward steps:

  1. Preheated oven at 170c (fan) / 190c (normal) / gas5.
  2. Heat the oil in a decent oven-proof casserole dish on the hob.
  3. Add Onions, Celery, Garlic & Quorn Chicken Pieces. Fry over a low heat until soft.
  4. Stir in all the spices*. Cook for a further minute or two.
  5. Add the tomatoes, broccoli, peppers, stock, salt & pepper and give it a good stir.
  6. Add the beans and continue to stir.
  7. Cover & put in a preheated oven for 20 minutes.

Serve this with some crusty wholewheat bread and it’s the business. I’m also made this dish with real chicken instead of Quorn vegetarian chicken and it’s beautiful with either.

Point to note – I normally double the measures of the spices as I love a dish to really dance but I’ve listed those above for those who prefer a lighter taste.
